Sauteed Brussels Sprouts with Chicken Breast Tenders

When you combine fiber-rich Brussels Sprouts with protein-packed chicken, adding more veggies and fiber to your diet really CAN be easy and delicious.

Ingredients

  • 2-3 TBSP Extra Virgin Olive Oil, or other saute medium
  • Ground black pepper, to taste
  • Ground cumin, to taste
  • 1 lb Chicken breast tenders (or skinless breasts)
  • 2 Large carrots
  • 1/2 Large yellow onion
  • 1 clove Garlic, finely chopped
  • 1 lb Brussels Sprouts, trimmed and slices
  • Juice from 1/2 lemon

Instructions

  1. In a med/large skillet, heat 1 or 1.5 Tbsp oil over medium-high heat.

    Season chicken on both sides with ground pepper and cumin, to taste; add to heated oil. Reduce heat to medium. Brown chicken on each side, 4-6 minutes per side (time may vary depending on thickness).

    When done, remove from pan, slice into bite-side pieces/shred and set aside.

    Do not clean pan before proceeding.

    Add remaining oil to pan and reheat over medium.

    Add carrots, onion and garlic; saute until onions are tender and translucent (approx. 6 min.). Add Brussels Sprouts, saute until just tender, approx. 3-4 min.

    Add chicken, toss to combine; add lemon juice, toss to combine.

    Serve as-is or with cauliflower rice.
