Chicken with Sauteed Cabbage and Carrots

When I was diagnosed with diverticulosis last year, my doctor recommended I add more fiber to my diet.  What did that mean?  So, I searched to find foods higher in fiber that  I (and my husband) would eat and found that cabbage.  This reminded me of comforting cabbage rolls and, in particular, a cabbage roll casserole that I’ve made in the past.  So, I substituted lower fat, higher protein chicken breasts for ground beef, tweaked some other bits and came up with what I’ve shared here.  If the diner isn’t watching their carbs, you can serve it over rice or mashed potatoes, but it is pretty satisfying without any starches.
